i have always found that if you break it all down add flour eggs and whatever other ingridiants you were going to use for flavor will work put it all together in a bowl make patties and fry them in about a cup of oil good luckAnswer #2:

1 (14.75 ounce) can canned salmon
1 egg
1/2 cup seasoned dry bread crumbs
1/4 cup chopped onion
1 tablespoon olive oil
Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
Make into patty's. If mixture is too dry to form into patties, add reserved liquid from salmon.
In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

I do this with tuna or salmon.Tuna Cakes
Tuna Mixture
1 can tuna, drained (packed in water)
1/4 tsp Dijon mustard
1/2 tsp dill relish
Dash of garlic powder
1 egg (or 1/4 cup Egg Beaters)
onion (optional)
1/4 cup bread crumbs (I use leftover whole grain bread, grind it up in the food processor and store in freezer for future recipes)
For Coating
Around 1/2 to 1 cup bread crumbs
Mix tuna mixture together in one bowl.
Using pie plate with crumbs in it (2 inches thick or more); make 4 to 6 patties, (or one big one if you want a big tuna burger sandwich), cover each one with the crumbs.
Place in preheated, Canola oiled pan.
Brown on one side and then gently flip it, to brown on other side.

Ingredients
1 (14.75 ounce) can salmon, undrained and flaked
1 slice of bread, shredded
3 Tbsp chopped green onion, including the green parts
1 medium garlic clove, minced
1 Tbsp fresh chopped dill weed, or 1 teaspoon dried
3 Tbsp minced green bell pepper
1 Tbsp flour
1 egg
1/2 teaspoon sweet paprika
1 teaspoon salt
Several turns of freshly ground black pepper
3 Tbsp vegetable oil
Method
1 In a large bowl, gently mix together the salmon, bread, green onion, garlic, dill, bell pepper, flour, egg, paprika, salt and pepper. Form into 8 patties; each about 1/2 inch thick.
2 Heat oil over medium high heat in a large skillet. Cook the patties until nicely browned on both sides, about 3-4 minutes per side.
Serves 4.

Things You'll Need:1 14.75 oz. can Pink Salmon
1 medium onion
1 egg
1 pack of crackers out of a box of crackers
skillet
butter or oil for cooking
1. Open salmon and drain. Place in a medium mixing bowl. Pick out the bones if you wish and then flake with a fork.
2. Peel and chop onion and place in bowl with salmon.
3. Add egg.
4. Crumble crackers and add to bowl with other three ingredients.
5. Mix ingredients together and shape into patties. Place butter or olive oil in skillet and heat slightly. Place patties in the skillet and fry and brown till you have browned them as brown as you like.
